A rather lazy and easy meal to throw together while my eyes were half closed and falling asleep, this taco calls for eggs, meat, cheddar and monterey jack cheese with Tapatio hot sauce.

Corn Tortilla

1/2 cup maseca/corn flour

salt

hot water

Add salt to taste for the maseca/ corn flour. Then add in hot water little by little until the flour becomes a dough-like consistency.

Knead the dough, 3 or 4 pieces, roll in ball and flatten with a roller.

With a skillet or griddle, turn the heat on medium and cook until the edges are slightly dry and surface is golden.

Taco Meat

Ground beef

Dijon mustard

Ground mexican chili

salt

honey

Turn the heat on medium, throw in the beef, dijon, ground mexican chili, salt, and honey according to taste. Done once the meat is brown.
